I love experimenting with food. I’m usually a copy cat of restaurants. I try as much as possible to re-create the menu I like. Today, however, I’m not being a copy-cat. Instead, I try to perfect my mom’s specialty — Pork Menudo.
Since, we just recently moved we are limited in financial resources — so are the ingredients of my menudo. But a good cook can create something over what’s available right? So here is my menudo with mushrooms.

The recipe should be:
Pork (cubed or menudo cut)
Pork Liver (or liver spread)
Tomatoes &Onions
Salt & Pepper
Tomato Sauce
Potatoes
Carrots
Green Peas
Raisins
Bell Pepper
Since I don’t have most of those (Potatoes, Raisins, Bell Pepper& Liver), I just added mushrooms and you just gotta add more flavor to the sauce. You get the sauce right, you get a tasty menudo.
Oh, you wanted how it’s cooked? Well, just mix ‘em all together until the pork is cooked. Except you put in the peas and the mushrooms last. That’s it.
Really.
